Today I’m in the mood of making a traditional Azerbaijani sweet bread called “Karabagh ketesi” which comes originally from the Karabagh region.
Karabagh Ketesi is a soft dough sweet bread with an amazingly tasty filling. I always loved this bread as a child, it brings so much sweet memories! I am sharing below our family recipe.
6 sweet breads
For the dough
- 3 eggs
- 100g melted butter
- 100g sugar
- 5 cups of flour
- 1 tea spoon yeast
- 1 tea spoon salt
- Water (as much as you need to create a solid “ball”
For the filling
- 2 cups of flour
- 5 cup of sugar
- 100g butter
- 1 egg yolk to put on top of it to get the golden colour.
Pour 1 tea spoon of yeast in luke warm water and let it rest for 5-10 minutes.
Mixing together in a bowl: first flour, then salt, egg, sugar and yeast. Melt the butter (make sure the liquid is not hot, it should be luke warm) and add it on top of it. Add small by small water till you get a nice soft dough. Knead it well and put in a bowl, cover it and let it rise for 2-2,5 hours.
Now we will move on to the preparation of the filling.
Melt the butter wait till it cools down a bit to luke warm, add vannille sugar and sugar and whisk till the ingredients melt. Add the flour and whisk with a spoon, you will get a sandy substance.
After the dough has risen, cut i tinto 6 pieces and make small balls.
Roll out the dough, make sure it is not higher than 1cm, put the filling and close it neatly and place the point where your closed the bread on the bottom so you see the smooth side of the bread.
Make small lines with a fork on the breads and put some egg yolk on it to get a beautiful golden colour. Place them all on an ovenplate outside the oven and let sit for another 25 min.
Place it now in the oven at 180 degrees for 20 minutes.
